Every day, we honour the land, the waters and the people who care for them — through the food we serve at Te Karaka Lodge.

To celebrate, our chef created a dish that speaks to Aotearoa’s rich, natural pantry and our commitment to sustainable cooking.

🐟 Mānuka-smoked kawawai croquetta – line-caught only. This helps to maintain healthy fish populations and was smoked with native manuka, reducing the need for imported smoked wood.

🌿 Kawakawa mayo – native and body healing

🌱 Watercress & parsnip – sourced seasonally, and grown with care

🔥 Smoked parsnip purée & parsnip crisp – zero-waste, full of flavour
